I don’t use salt if I can help it. I do use soy sauce, anchovies, Parmesan cheese and other things that add both umami and sodium.

The idea is to contrast the hot salty umami pork with the cold bland tofu, and the comfort of white rice. Great home cooked meal. You can eat alongside veg, I like steamed broccoli here.

You want it deeply brown from the soy but not too much liquid. A bit of Maillard reaction is also good. Take the soft tofu out of its packaging. Lay it on the plate. Pour the minced pork over it while hot. Scatter with sliced scallions. Eat with white rice.

Well, here’s a favourite, but it’s very much southern Chinese home style. Sizzle thinly sliced ginger and minced garlic in oil. When aromatic, throw in minced pork (add an anchovy or two if you like). Stirfry till browning, season with dark soy, light soy, oyster sauce, sesame oil and white pepper
