Whenever I’m experimenting w/anything new, I run home to momma: “How to Cook Everything” by Mark Bittman. 3 different recipes (lentils w/caramelized onions; black beans w/rice; red beans w/ham) were inspiration. Sofrito spices & crispy fried shallots (the topping) are from Trader Joe’s.
