Well, that mix screams a Mex. skillet or chili start of some sort, but I'm from Southern Colorado, and meatloaf is yuck.... Honestly, with the veggies frozen all bets are off, might fry up nice and now we'll all have a secret. My freezer is full, you tell us how it goes! :-)

Ok, gonna weigh in .... If you're gonna bake ok, but if you're gonna brown in a skillet, keep the meat separate from onions and pepprs, because they release too much water and the meat won't get that nice browning.But having said that, the veggies are frozen first 🤔 let's all experiment and see!
