Gaeng Hung Lay, a Northern Thai curry, reminiscent of Indonesian Rendang. Made with pork belly & shoulder braised in Thai red curry paste mixed with a garam masala type spice mix, dark soya & tamarind. Finished with garlic cloves, onions & ginger. By and far the best curry I've ever had.

Definitely rushed it a bit with the rise because we wanted a loaf plto eat with some soup for supper but the flavour is great even if it's a little bit dense. The soup is pinto beans with chipotle peppers in adobo, with cilantro, scallions and lime.

Some Thai green curry in progress. I'm making a bone broth with lemongrass and galangal to then braise the pork shoulder. Then I'll saute the curry paste in coconut cream and add that to the pork later along with some of the vegetables so it keeps a brighter green colour.
