Meats get cooked first, then set aside, but shrimp or scallops go in right before the sauce step. As soon as they're JUST done plate everything & bring your sauce to a good boil. That's for Thai style sauces, or sweet & sour ones. Simple soy based sauces can go in as you cook, a splash at a time.

It's busy, it's fast, it's precise, but it's not HARD to do. Basic order things go into the wok:, carrots > bell pepper, onion, broccoli, > mushrooms, asparagus (I like mine with some crunch) > bok choy. Snow peas or bean sprouts I add at the very end, when I put everything into the sauce.

BTW, I learned stir fry knife skills & sauces from Wok With Yan & Yan Can Cook (two DIFFERENT Yans, as it happens) & yes, there are specific ways to cut every veggie but it's not rocket science. They go into a hot wok in the order of how long they take to cook, which is why stir frying is FUN. 🤭

Now, about pans .... 😎 I have an 8" Emeril chef's saute pan, which is wok-shaped, indestructible & just the right size. It's discontinued but shows up on eBay, as does the 8.75" Calphalon Solo Fry Ken Hom & T-Fal both make 8" woks now you can buy new. More single people cooking at home, I guess!

This is the PERFECT amount of sauce for a solo Thai stir fry in a small wok (I use a flat bottomed Emeril one) but you can scale it up for whatever size meal you're making. I reverse engineered it from Tom Kha & have been using it as a stir fry sauce for nearly 30 years now.

1 TB each of: Soy sauce Fish sauce Chili crisp or sambal oelek Peanut butter Juice of one lime wedge Mix well until the PB breaks up, then add 1/2 cup of coconut milk You're welcome. 😊 Stir fry the veggies & meat, then remove & bring this to a boil in the wok before adding them back in.
