Excellent piece.
I was taught to make gumbo - seafood, or chicken/sausage, but ne'er the twain shall meet - by my Cajun fishing buddy who was born in Montegut and moved to the big city... Raceland.
He never uses a roux, nor filé, and only rarely okra. I like his gumbos, but mine are better.
