OTS (other than standard) wine is alcohol that is fermented from the waste of fruit that is filtered and adjusted until it becomes a neutral industrial alcohol that can be used in place of traditionally-fermented grape wine. The basic reason that OTS wine exists is so cheap booze can get around the taxes and regulations attached to making their products with distilled liquor. You can make OTS from any fruit, but oranges, being relatively large and producing a lot of waste (peels and pulp), are the most popular choice.
