And once you have a puree (left), you’re gonna add a whole pot of crème fraiche. If the soup has cooled bring it back to hot. Do not skip the crème fraiche. Oatly makes a great vegan one. And then salt and white pepper to taste and you’re done!

Forgot the photo there. And then add your herbs- rosemary, thyme, and whole black peppercorns. I put them in empty teabags or cheesecloth to make it easier to get them out at the end, I really recommend fresh. Sage is also nice. Now bring this to the boil, cover, and simmer.

Once the alcohol has cooked off (you can tell by the smell), tip your peeled and chopped potatoes in. Size again doesn’t matter but the smaller they are, the faster it cooks. You just want uniform size.

Give that an occasional stir while the fat renders, and wash and slice your leeks. At no point in this recipe does size or shape of ingredient matter; it gets pureed at the end. I do this because it’s easiest to wash. You do want a 1:2 ratio of leek:potato.
