today @bleat.ing and i made shepherds pie with soy curls instead of meat

photograph of a lilac pan with shepherds pie in it. the top of the mashed potato layer is a delightful golden brown. the filling has stayed together after having a couple of scoops removed, and is made of onion, celery, carrot, garlic, soy curls, red wine, frozen peas, and a cornstarch slurry to thicken the mixture

fermenting some lemons

quart sized ball mason jar with lemons & their juice plus 6% salt by weight. there is a weight on top of the lemons, and they are all fully submerged in the lemon juice brine.

this is slightly different than salt preserving lemons, which is a much higher salt percentage by weight and is not an anaerobic process.

i made red beans and rice today :3

a dutch oven sitting on an induction plate. the reduction lines from a long cook stretch halfway down from the top; the result of a nice long cook. in the dutch oven is a rich brown sauce dotted with domingo rojo beans and well-cooked quartered coins of andouille sausage. the beans and sausage pieces are about equal in size. not pictured: basmati rice that this was served over.

you could say that “no man’s sky” is an incredible good game and i think you would be correct

a screenshot of the video game no man’s sky. there is a ship with solar sails backlit by the system’s star. three planets are visible on the screen to the bottom left, just right of but behind the ship, and in the top right a planet with rings similar to saturn’s. the image is very blue with a lot of lens flares, for the cool factor. shoutouts to the ancient bajorans and ben & jake sisko.

i committed culinary crimes; i used a mirepoix when making a masala that i then cooked marcella beans in, like they were chickpeas

photograph of marcella beans cooked in a masala a la chana masala. a full mirepoix was used in the creation of the masala so there is carrot and celery in the soupy beans.

you can also see some chunks of seared paneer in the beans, and some cilantro on top
