Speaking really fast because you need to say what you're thinking before you forget it can mean your brain doesn't have time to also process & implement the changes you want to make to how your voice sounds.

Tips: Find multiple ways to exercise the muscles, and always go slightly past your goal (eg: for a spoken pitch range of E3-C4, regularly stretch your voice to D4 or higher.)

Be patient. It will gradually get easier to maintain the changes without having to actively think about it so much.

I have SO MUCH to say on this topic, but I'll just start with this: Instead of calling it a voice break, call it a gear change. If you perceive a part of your voice as a negative, you will find it infinitely harder to explore and learn to make your voice do what you want it to.
