Made chana masala (Recipe in alt text)

Chana masala recipe

All spices to taste; add more if you like more (i smoke a lot so i like a fuckload of spices), but I recommend at least a tbsp of each for the powdered ones, at least twice that much garam masala

Recipe can easily be multiplied in size, as long as there are equal parts canned chickpeas and canned tomatoes.

Ingredients:

Olive oil (good amount in bottom of pan, thick enough to cover a coin entirely)
Powdered coriander
Powdered cumin
Powdered turmeric
Powdered chili
Garam masala
Whole cardamom pods- at least 2
Whole star anise- at least 1
Whole bay leaves- at least 2
Whole cinnamon stick- at least 1
Ginger- minced if fresh. Fresh preferred but powdered okay.
Garlic- at least 2 cloves, minced
An onion, diced
A large carrot, diced
Fresh cilantro/corriander- small bunch, chopped up
A habanero pepper (or more, if you like to live a little), minced
Black pepper- at least like 8 corns worth, freshly ground preferable
Canned tomatoes
Canned chickpeas
Salt
Msg (optional)
A dash of dried fenugreek leaves (i dont have any ;w;)

Use a wooden spoon so you can really scrape any browned bits off the bottom of the pan- they make the sauce taste so good

Recipe:

In a large pan, heat olive oil until it's hot enough to sizzle. Start at high heat to get things going but bring it down to medium-low as soon as things are sizzling.

Add the whole spices, then toast them for a minute

Add garlic (&fresh ginger if youre using that). Keep stirring and cook it for like 20 seconds

Add powdered cumin, corriander, and ginger (if you're not using fresh ginger)

Sautee until the garlic is barely browned but before it can burn at all

Add onion and at least 2tbsp of garam masala. Bring it up to medium-high heat. Sautee for 5 minutes, stirring frequently.

Add carrot. Sautee for 5 minutes.

Add habanero. Sautee for 2 minutes.

Add turmeric, powdered chili and black pepper. Sautee for 5 minutes.

Add canned tomatoes. Add canned chickpeas, draining half of their liquid because otherwise it would be too gluey. Add a can's worth of water. Add the chopped corriander. Add salt and msg to taste

Bring it to a boil, then bring it down to a simmer on medium-low heat. Cook it for at least a half hour, but way longer preferred to develop more flavor. Stir every 15-20 minutes, making sure to scrape the bottom of the ban all around with your wooden spoon to make sure none of the starches in the beans or the sugars in the tomato burn.

When it is the thickness you like, cover it for the remaining cooktime

Taste for seasoning. Add more of whatever you think it needs, and optionally a dash of sugar

Serve with rice or naan
