Ube cupcakes & lemon cake

Recipe: Mae Serves You Food

Notes: Kinda fucked it up by trying to do half & half butter & oil, but turned out a-ok. <110 g sugar. Tastes more eggy than ube. Very soft and fluffy.

1. Cream RT stick of butter & sugar
2. Add 2 eggs, one at a time. Beat.
3. Add 10 g ube extract. Beat.
4. Dry: 125 g AP, 6 g bp, 1 g salt
5. Alt dry w/ 1/2 c milk. Fold. No streaks.
6. Bake @ 425 F for 5 min, then 350 F for total of 18 min.

Recipe: Plated Cravings

Note: Used 6 small lemons. (Not pictured: lemon curd). Actually did fuck up by leaving creamed mix alone for too long until it separated. Less fluffy than previous. Tastes very buttery. Zest and prepare dry first. ~110 g sugar. <100 g butter.

1. Dry: 180 AP, 7.5 g bp, 2.8 g salt, 6 g zest.
2. Cream RT stick of butter & sugar
3. Add 2 eggs, one at a time. Beat.
4. Add 31 g lemon juice, 5 g vanilla. Beat.
5. Alt dry w/ 120 mL buttermilk (7.6 g lemon juice + milk). Fold. No streaks.
6. Bake @ 350 F for 45 min.

What’s Gaby Cooking recipe.
Note to self: 1 stick of butter. Brown. Whisk in 3/4 c sugar, 3/4 c cocoa. Half-half tsp of bs & bp. 23 min tot bake time; 7 min @ 425C, then 350C. Yields 6.

Tender, tight crumb.

Can really taste a satisfying nutty roundness and a snappy sugary finish, but for that amount of sugar and butter, this recipe is best shared.

Almond croissant muffins

Rainbow Nourishment’s recipe.
Note to self: Bake at 425C for only 5 min (did 9 & dried out). Makes 9 servings when filled to the rim, so roll out 9 frangipane balls. Mix with baking soda for more rise.

Almond has a fruity, cherry flavor (benzaldehyde). Also powdery (/느끼해). Would like to pair with oranges.

Corn muffins

Golden cornbread muffin studded with corn meal grits and pieces of corn.

Once Upon a Chef’s recipe, but 1 tsp baking powder, 2 tsp baking soda. Brown butter. Buttermilk. <1/3 cup of corn. Fold in mid-mix. Flour streaks in final batter. Bake @ 425C for 8 min, tot 23 min.

Inside of corn muffin. Soft and tender with a healthy smattering of kernels (unlike “wetness” caused by overmixing in last few muffins). Complements crusty exterior and absorbs honey like a sponge.

Lemon poppy seed muffins

8 lemon poppy seed muffins on square plate. Crumb is still on the moister side, but not bad… maybe it’s just the way it’s meant to be.

Piece of muffin served with lemon syrup.

Made with fresh lemon zest and juice. Very fragrant and not too sweet. Variations of this with different fruit would be honestly lovely.

Carrot streusel topped (but the carrot is masked by the sugar). Went overzealous with the carrot, and the crumb is too moist/ not fluffy. It’ll set by tmrw.

Banana muffin

Outside toasted, and inside moist and rich with banana flavor. Half-and-half butter and oil. No milk (cause I had none). Wanted more flavor, so vanilla, salt, and cinnamon were added generously. Favorite thus far.

Half-and-half oil and butter. Cornbread can afford to be dry. Smaller muffins had more crust and better flavor, too. Butter is the way to go. Still, looks good 🙂‍↕️

Poppyseed muffins Keep forgetting I have lemons. A little zest would have added some brightness. (아쉬움)

Crumb is soft and airy. Moist because of oil.

Earlier blueberry muffins were pale and tragic. This time brought wet ingredients up to room temperature, sifted dry ingredients, and left lumps in batter.
