Hi. Yes, you can define different interpolations for the keyframes, such as smooth, linear, bézier, ease in, etc. These include the Step interpolation, which is the one you are looking for. You can also set different interpolation intervals to each keyframe, so you can animate on 1s, 2s, 3s, etc.

It's hard to know what is happening by just looking at the pictures, but maybe check the bone hierarchy. If bones are not linked, they won't appear as a connected line when using the Sketch bones tool
