Probably a combo of overproofed, too much water, and possibly too much psyllium husk. ❤️ However, I know I put just the right amount of love into it. I'll tweek the other variables as I bake more and get more experience.

Every #GF #bread recipe says something like, "Bake for XX to YY minutes (uncovered) or until the internal temperature reaches 205℉" The instant-read thermometer read 213℉. Deflation happened right after removing the probe. There were other problems. #breadfails #learningexperience #trytryagain

But it smelled really, really good. The loaf had a nutty, rich smell that implied that when I finally get this figured out, it's gonna to taste amazing!

Today I'm making GF teff flour bread again, but making a few modifications: bloomed yeast separately; substituted brown rice flour for 1/3 of the teff flour; added an extra 200 grams of warm water (so the dough was hydrated enough); and used a hand mixer. I also used all the mixing bowls (again) 🥣

🍞 Last week I baked #gluten-free sorghum + brown rice flour #bread. A little squat, but the most successful GF loaf I've baked so far. I told him to wait until I toasted it, but Brad had a nibble from the first slice and declared it good!

We added a "Happy Got Me Day" hat to the lunch box that we use to his lunch and meds on daycare days.

Scooter's lunch bag is a Scoobie-Doo cartoon dog lunch bag. The top has floppy brown ears (that always get in the way when you're trying to zip up the lunch bag). Written in Sharper marker, at the bottom, is "SCOOTER DOO", so the doggie daycare staff can find Scooter's stuff at lunch time.

My husband took this picture when I had a mouthful of food *and* was trying not to laugh at the, uh, "big poultry" comment he had just made. 🐓

Scooter, a 2 year old German Shepard-Lab mix 2 year dog, takes a break from his whining to give me a sad look. He's standing at the edge of a kitchen cabinet, behind some yellow CAUTION tape that's knee-high for him. The path of the yellow caution tape is also mirrored by some blue painter's tape on the floor. It was our hope that we could remove the yellow caution tape and rely on the blue painter's tape to reinforce the "Stay Out of The Kitchen" message. A week of recent testing proved us wrong.
