Plus, the entire point of Debian is stability, and working with darn near anything. You'll want to steer clear of any DEs based on Weyland (KDE Plasma or Ubuntu) for now, at least. If you can, dual boot with the distro/your current OS, see how you like it.

Oh, a 1080? I would def try Debian with XFCE (or another X11-based DE) at least once. The lower RAM/VRAM overhead should speed up your system considerably, and the 1080 is old enough so that Debian drivers should pretty much be caught up.

What card do you have? I've found Debian with XFCE to be particularly stable and lightweight. It brought my old Asus Zenbook back to life, now it runs almost like new. Only problem is gaming; Debian doesn't run the latest drivers for nearly anything.
