Forever Friends Funnel Cake

Ingredients
1/2 Cup Flour
1 tbsp Sugar
3/4 tsp Baking Powder
1 Pinch of Salt
1/3 Cup Milk
1 Egg, Lightly Beaten
1/2 tsp Vanilla Extract
1 tbsp Water
Vegetable Oil
Powdered Sugar
Sprinkles (Yellow, Blue, Green and Orange)

Funnel Cake Prep
1. In a medium bowl, whisk together the flour, sugar, baking powder and salt till combined.
2. In a separate large bowl, whisk together the milk, egg, vanilla and water. Gradually add the dry mix and combine until the batter is smooth.
3. Heat an inch of vegetable oil in a deep saucepan over. Medium-low heat.
4. Pour the batter into a funnel (keeping your finger covering the bottom until ready to pour) and drizzle it into the oil in a zigzag pattern over and over until all the batter has been funneled.
5. Fry on each side until golden brown (Approx. 2 to 4 minutes) and use a spatula or tongs to flip.

Putting the Dish Together
1. Place on a paper towel lined plate and immediately sprinkle the powdered sugar on top while it’s hot.
2. Top with sprinkles in the colors of Molly, Scratch, Libby and Ollie’s wraith forms.

We hope you all had a Perfect Day yesterday! Treat yourself to something that is not a pancake, but a frosty family-friendly beverage that Ruben’s Root Beer Pub would likely have on it’s menu.

Chen's Root Beer Float

Ingredients:
One Bottle of Chilled
Root Beer
Pistachio Ice Cream or Gelato
Whip Cream
Chocolate Chips

Prepping the Float
1. Chill a glass or mug in the freezer for a minumum of 20 minutes. Take out and prepare to get everything in before the cold. wears off.
2. Place in enough pistachio ice cream until it's almost at the top. The green color brings to mind the ammo from the Chen's Boo Blaster's.
3. Carefully pour in the chilled root beer, let the fizz rise to the top.

Putting the Dish Together
1. Pour a circle of whip cream on one side of the cup before the fizz goes down.
2. Place three chocolate chips in the whip cream. Two on top and one in the lower middle. Now you have a ghost face!
(Optional) Pour more Root Beer in after the cream.

Recipe card for Libby Latkes

Ingredients: 2 Large Shredded Russet Potatoes, 1/4 cup diced Yellow Onion, 8 crushed Saltine Crackers, 2 beaten Large Eggs, 1/2 teaspoon Salt, 1/4 teaspoon Ground Black Pepper, 1/2 cup Vegetable Oil, Chopped Chives, Applesauce

1. Grate the potatoes with a grater over a paper towel or cloth. (You can also use frozen hash browns!) Squeeze out as much liquid as you can.
2. Combine grated potatoes, onions and beaten eggs in a large bowl. Ther add the crushed crackers (or bread crumbs!), salt and black pepper anc gently stir together into a potato-y batter.
3. Heat a heavy skillet on medium-high and add 1/4 inch teaspoon of vegetable oil in. Add another 1/4 teaspoon for each latke.
4. Add a spoonful of latke mix on top of the oiled spot and slightly flatten with the back of the spoon or spatula.
5. Cook one side for 3 to 5 minutes before flipping and cooking the other side for another 3 to 5 minutes.
6. Place latke's on a plate lined with paper towels and drain off any excess

Plate a latke and add chives to taste. Spoon applesauce into one large oval and four thin lines to shape it into a turtle. You can even use the chives to make eyes!

Recipe card for McGee Mango Sticky Rice

Ingredients: 1 Fresh Mango, 1 cup Sticky Rice, 1 cup Coconut Milk (Unsweetened), 1/4 cup Sugar, and 1/4 Teaspoon Salt

1. Soak rice in water for 1-2 hours.
2. Steam rice in steamer or rice cooker for 20-30 minutes. Make sure the middle is soft.
3. While waiting, pour coconut milk into a small pot & turn it on medium heat. Add sugar & salt and stir often until all is dissolved & boiling. Turn off heat & cover until needed.
3.5. You can make a second batch of the sauce & save it to pour on top of the finished dish for extra flavor).
4. Once rice is done, move it into a larger bowl & pour the sauce over it. Cover & allow the rice to absorb the sauce for at least 5 minutes.
5. Peel mango skin, then cut into slices.

If you have a heart shaped cookie cutter, place it on a plate & scoop the rice into it for a firm heart shape. If you have no such cutter, scoop the rice and use a spoon or rice paddle to mold it into shape. Then take four mango slices and arrange them into an 'M' shape for 'McGee'. Bonus: If you made a second batch of the coconut sauce, pour it over the rice for extra flavor!
