This is incorrect. But who cares about words and their meanings and the law anymore. One can absolutely support them w/out being attracted to children themselves. Not saying that’s better. Just saying it’s unfortunate you can’t see the definitional distinction. It dilutes the victim’s suffering.

Just googled kennebecs & they’re incredibly versatile, excellent for roasting. Better than reds (my faves) for moisture retention & crisping. Great for boiling, fries, chips, excellent frying potato for breakfast potatoes. You chose well! Post pics when you cook them. 😊 Good luck!

Nooooooo. You want rough surfaces - correct ✅. Miss me with “leave in a pot to steam.” 😱😫. When you want crispy or crunchy, you ALWAYS want a dry surface. It’s the reason you blot your chicken before dredging & frying, steak, etc. Moisture & oil are not friends. Moisture ≠ crispiness.

Also, whole baby potatoes are very forgiving & may give you your softest center b/c they’re not exposed. Trade off is they may not give you the uniform deep golden brown crisp you want. Fingerlings are also a great choice, sliced lengthwise or whole if they’re really small.

Russets will work in a pinch but not preferred. I use red, skin on unless someone objects. After parboiling, dry throughly. Ultimate crisp, use paper towels to blot. Take a pic & let us know how it went! Elevate w/ whole sprigs of rosemary & cloves of garlic. (so no stems or charred minced garlic).

Waxy potatoes, eg. Yukons. Russets dry easier. Cut large (small dries easier, better for pan fry). Parboil, oil (duck fat if you have!), roast covered with foil for first 10–15 mins at 425F. Bake for 40, turn once. Can also take out a bit early and crisp in a pan. Bon App!
