One thing not mentioned enough about Stone’s one-page designs is how collaborative the effort was between he and my team. New revisions usually happened because we discovered something new about the simulation engine while scripting the flows, requiring simplifications or the opposite.

Every specialty food is on a spectrum… you can buy a “camembert fermier” which would be the runniest, stinkiest cheese ever, or one at a grocery store across the country from where it’s made and it will be almost a hard cheese 🧀 I haven’t eaten swamp rabbit since I was a kid, and certainly not now

They call it “swamp rabbit”, so that should give you an idea. As for your andouillette, the biggest factor is likely that you had it from a farm rather than a regular restaurant
