A plate of hearty Ecuadorian food featuring braised pork, slowly oven braised for five hours until tender and juicy and laying on its own gravy, served with two llapingacho (potato patties), corn, mote ("hominy" in the U.S.) sauteed with mapahuira (the fat that remains in the bottom of a frying pan after cooking meat), and topped with traditional pickled relish.
