It shocked many people in Korea too 🥲 Fumes from high-heat frying, stir-frying, and grilling fish or meat are a major reason Korean women who have never smoked develop lung cancer. I’m really glad it’s finally getting attention 🙏

When lunch arrives on time, it’s easy to assume the kitchen is doing fine. #Korean cooks, unions, researchers and parents helped reveal another story. If you’ve read my essay on the risks, this #podcast adds the story of the people pushing for change. youtu.be/GOFvfqCnJUk?...

Because #Korea built so many impressive public systems so quickly, the blind spots often sit right next to our biggest successes. Pointing out what lags behind is not about diminishing what works well. It is about making sure the people who keep those systems running are not left behind.

#KoreanSchools brought in cooking robots to ease kitchen work. But one cook said the effort saved on stirring went into cleaning the robot. Another had longer hours and shorter breaks. This essay follows the people feeding Korea’s children and asks what would actually make their work safer.

That is such a telling memory! It is a great reminder that fresh cooking wasn't an impossible dream in the US, it was actually the norm before outsourcing and reheating took over. Thank you so much for sharing that piece of history🙏

The Women Behind Korea’s School Lunch Trays
Listen now | What "teacher," "auntie," and "a mother's devotion" reveal about the women who feed Korea's schoolkids

1/2 In #Korea, a school cook can be called seonsaengnim (“teacher”). So can a hairdresser or doctor. The word can show respect without describing their job. At a middle school, a teacher asked students to call the cooking staff “teacher” rather than “auntie.” Kim Jin-sook said it gave her strength.

Thanks for reposting 🙏 And yes, the "Cafeteria Master"!!! Watching her outcook fine-dining chefs was so satisfying 😆 It was living proof of the exact point: cooking under pressure for hundreds builds an elite level of technique, timing, and palate.

In a #Koreanschool, a fried egg for 550 students doesn't come from a frozen bag. It means cracking and flipping 550 eggs by hand, one by one, against the clock. A screenshot from EBS’s PD Log, featured in my latest essay on the hidden skill behind Korea's school lunch trays.
A school cafeteria worker wearing silver waterproof arm covers and white gloves cracks a fresh egg onto a large commercial flat-top griddle. Several sunny-side-up eggs sizzle on the grill in front, while dozens of brown egg crates are stacked high in the background. Korean television text in the upper left corner reads "PD Log: The Miracle of Three Meals a Day, School Cafeteria Kitchen."

3/3 everything was hyper-insulated, individually packed, and chilled for dawn delivery. It made her ask why our systems go to such lengths to protect the fresh strawberries while leaving the workers' bodies so unprotected.

2/3 When she lived in Germany, she didn't have a car and relied on local grocery delivery, which she found plenty convenient even though items arrived simply in paper bags without any plastic fuss. But when she returned to Korea, she was stunned by the extreme shift:

1/3 Thank you for this thoughtful point, Karo! Interestingly, Dr. Seung-yoon Lee, the author of the book I reviewed in this piece, touches on that exact contrast in her book.

My daughter’s US school lunch is considered "good," but it's mostly reheated vendor food. In #Korea, schools cook hot meals entirely from scratch daily. Yet because it looks like home cooking, society dismisses it as "just moms doing mother work." Why care work is still denied status as a skill:

#Korea’s fastest comforts come with a question: who absorbs the time, risk, and exhaustion we no longer have to see? No new essay tomorrow (it’s my monthly research week), so I’m sharing one I missed posting here before my summer break. yoonjiwon.substack.com/p/korea-invi...

📷 A little scenery from Korea to go with my Chuseok wishes: My dad took these at Daewangam Park in Ulsan, where legend says King Munmu’s queen became a dragon to guard the sea. Happy Chuseok, wherever you are. 🌕

“더도 말고 덜도 말고 한가위만 같아라.” “May every day be just like Chuseok. No more, no less.” It’s a Korean wish for the harvest holiday’s abundance and togetherness to last all year. After my daughter’s birthday dinner with her friends, I can see why.

Her best friend arrived early at the school bus stop just to ride with her on her birthday. Later, she and her little brother shared her birthday seaweed soup and galbi. Their parents are from Nepal; Korean food is a shared favorite. My daughter kept telling me how happy she was.

Seven years of Korean school lunches means you could probably make a sequel! The teachers’ table is such a familiar little institution of its own, and a faculty dining room with meals prepared by food-service students sounds like the real swanky deal indeed. 😄
