@audioflyer79 I make it 1gal at a time. A batch usually takes 2-4 weeks. And then yes it does get better with age. I have made some that completely change over the course of a year. I have made an elderberry and a pomegranate that both ended up tasting like a nice red wine after 8 or 9 months.

I also bottled the barrel aged spiced pomegranate, for which I made a spice tincture in brandy, so it has a slight brandy flavor and tartness from the pomegranate. Very interesting mead!
