"Wahaca" is pretty straightforwardly an embarrassing spelling. It is basically an insult to British patrons, who are not trusted to learn how to pronounce a foreign word.
Americans, however, actually cannot be trusted to pronounce foreign words, as with "Birming-ham" and "Noder Daym" (Notre Dame).
