Last year I bought 20lbs of green olives to cure and it took 3ppl, 4hrs to score and cure then all and left me with hand joint pains for weeks. This year, husband invented an olive scoring tool that made is a breeze and we cured 10lbs in around 30 mins. 🥰

Sometimes one needs to witness a natural event to remember how small and non-significant we are. This year it was seeing a volcanic eruption blooming for me. I watched a small bubble of lava growing from almost nothing to a 200m tall giant fountain with 300 m3/second lava flow. Spectacular. ❤️‍🔥

Spring! Not only it is a beautiful time for the garden with all the bloom, it also is the time for the home cured olives to be eaten. After manually scoring each and allowing them to cure/ferment in brine for 6 months they are ready - crunchy, savory and pleasantly bitter with a slight bite. ❤️
