Well I'm South African and most of what I eat is stuff I cook from scratch using fresh items I get from fruit/veg markets and butcheries so when I defend ultra-processed food on the basis of what I believe to be culinary value, it's not coming from a place of ignorance. Food isn't only nutrition.

Like... If we had disqualify items from our culinary culture on the basis of whether or not they're sufficiently nutritious, have adverse effects in large amounts or are potentially carcinogenic, we'd have very little left to eat besides an extremely specific selection of nuts and beans maybe lol

No one's arguing that it's healthy either though. That's not the point. Everyone knows that processed cheese is loaded with added oils and fats, is extremely high in sodium and often also contains various starches (and thus empty calories) and sugars for flavour etc.

Cheese doesn't come from a dairy farm. Milk comes from a dairy farm. Cheese comes from factories, speciality cheese shops and artisanal cheesemakers.

I'm not arguing for it to be considered a cheese, it's not a cheese, it's made from cheese. I just don't like the general attitude that people have towards it as an ingredient.

Cheddar and Gouda are the standards in SA but I've done the American cheese and enjoyed it. Gruyere is excellent and I really like brie or camembert lol

In South Africa, processed/American cheese is often found in cheese sauces and pies. There's something very comforting about it to me. I know it spikes my sodium and cholesterol levels but sometimes that's exactly what you want after a long day lol

I mean you won't find me defending it on the grounds of nutrition or honesty in advertising lol But I think it has value as an ingredient. It's a part of the world's culinary culture now. I'd rather have American cheese in a hamburger than cheddar, for example.

And salts give it a distinct creamy and fatty flavour that lends itself well to certain applications. Also, it's not very nice to shit on food that exists out of necessity anyway. The same can be said of most cheeses.

You've completely missed the point of my post. There are some pretty great cheese shops I can go to if I wanna get a nice aged cheddar or some pecorino romano or brie but processed cheese is an ingredient and it has its place in food and cuisine. It melts in a very particular way and the added oils

To clarify, this isn't me being all "haha we're better than America lol". The situation here is pretty grim too. I'm just saying there's more to democracy than voting and if you have a democracy (on paper), you should be employing the rights given to you, not just voting, to try and effect change.

Your mistake is in believing that what you Americans have qualifies even remotely as a democracy in the first place. Being able to pick between two people every four years is neither democracy, nor the determining factor in policy or your rights and dignities.
