Which never quite got the angle right. 5 minutes with the new tool and the knife was sharper than when I bought it. Here is a demo. I am holding the last 1/2” of the handle with my thumb and forefinger.

understand how everything worked. It has 7 or 8 different sharpening stones , plus a leather strop. The paring knife came out razor sharp after about 5 minutes. Next I tried one of my good knives. A HexClad chef’s knife. This set have always been sharpened on a rolling sharpener,

My new knife sharpener arrived. OMG, it is twice the size I imagined it and comes in a carrying case that looks like it belongs with a set of surgical instruments. Too tired to play with knives tonight. More tomorrow.
