For me I think of them as a rotation. I'll work on one project until I've lost interest, and I'll "fall back" to a 2nd project. When I get bored of that, I'll fall back on a 3rd, and repeat to the 1st. It makes the progress of each project MUCH slower, but I'm consistently productive on something
