1. "you people"? Come on. 2. Also known as a German pancake and very close to Yorkshire pudding. 3. I don't think this is holding onto traditions longer than Europeans. It's just what it is called. See screenshot for origin story (which I learned today).

the story goes, once upon a time, in the early 1900s, a Seattle restaurant called Manca's served pancakes using a batter that originated in Germany. Instead of cooking them on the stovetop, they put the pans into the oven. WHY? Most likely, the answer is "efficiency." It's
much easier to set a pan of batter into the oven than it is to watch and flip on the stove.

And the name Dutch? The story claims that one of the owners' daughters mispronounced the name "Deutsch" as "Dutch" and that the word "baby" referred to the miniature versions of
pancakes that the restaurant specialized in.

So, a Dutch Baby turns out to be an American dish made from German roots.

I have an update on the hotel. I came back from dinner tonight had been away all day and there was the nicest note from the front desk and a giant bar of chocolate. A small gesture, but it made me feel so much better about what happened last night.
