If you want to know how I do the fries by the way; its pretty simple so worth sharing I put temps in F for an American friend but if you use C the oil temperatures should be 150C for fry 1 and 190C for fry 2! Its obviously a little easier if you have a fryer; idk if it works in an air fryer

You can use any medium to high heat oil you want as long as it can handle 200C/400F; i use sunflower or vegetable

Exchange the F temperatures for 150C/190C if from UK like me
So like what I do is:

The night before, I peel and cut 4-5 medium to large tatos (i WISH I had russet) into fries and then put them in a water bath overnight to get off the starch

The next day a couple hours before dinner I'll drain them, dry them with towel (best to dry as much as possible cus the water can lower the temperature) and preheat my fry oil to about 300F, then when it hits that temperature I put the fries in for about 10 minutes

You can literally take them out and leave them for a few hours until you're ready for dinner

When its time for meal you preheat the oil to 374F and fry for another 8-10 minutes, then take them out and sprinkle with salt
And thats it
