Biological sex is irrelevant to contemporary debates. Medical sex (which is basically colloquial sex) and gender are. I'd argue that there is a genuine, non-arbitrary binary in biological sex, but it also doesn't classify all humans, and it doesn't classify *any* human at conception.

A portrait of Sternotomis amabilis, a longhorn beetle. Its green and orange scales get their color from photonic crystals of chitin+air rather than from pigments, a great example of structural coloration.
