Great improvisation! I didn't want to deal with a huge and heavy rectangular dutch oven for batards so I put together a baking shell on top of a steel. Works great. Keeps the steam in almost as well as a dutch oven.

I'm currently in Portugal. Everybody shops at these local farmer's markets. No one bats an eye at the imperfections of the ultra-fresh produce - they just appreciate the freshness and quality of the flavors. Americans need to get reacquainted with *real* food.

👊🏻 Repurposed 55 gallon drums cost $20 each. Leftover paint. A few dollars for valves and tubing. A couple hours labor. Rain water free! Forever.
