I think the overlap of country music and CFL fans has a lot. I don't think it's a reach to get new eyes. Maybe it can get more 🇺🇸 eyes watching down south... I don't think it's a bad choice. It seems like a safe choice and the safest place to bring a 🇺🇸 act in is Calgary in terms of blowback. Sure

Came out great. Well rendered, good flavour, the point especially is pull apart tender. Flat came out lighter in smoke (wasn't on the smoker as long) but still tender. Probably the last brisket for the season.

Got point up to temp in the oven at 175. Resting overnight. Will slice in the early morning. The family is excited for brisket and eggs in the morning.

Big flare up in the smoker. Chips caught fire, caught the drip tray. Grade fires out, but casualty is the wireless thermometer. Cleaned up (moved chips and tray up further from burner) and will be able to finish safely.

Flat pulled at 190ºf and entering the rest in the oven. Bark looks good but I didn't snap a photo before wrapping. Point (thicker half) was above it in the smoker, dripping onto it. It's only at 138º/180. Pulled the flat a higher temp to give it more smoke time for flavour.

Doing it again. Full brisket. Less fat trimmed. Rubbed with Rampage Coffee Sweet Canadian Maple. Smoking over mesquite and apple (from our tree the storm knocked down this summer). Should hit 180ºf late this evening or tonight, then resting overnight at min, wrapped, in the oven. More to come.
