For whatever reason, Tasmota/MQTT on the Sonoff S31 wasn't updating @home-assistant.io in a timely/consistent manner, but I found out ESPHome is supported, and I am much more familiar with that. Updated and now waiting for my embroidery machine to stop to know if everything is working...

In the interest of full disclosure, Secretary (2002) was not a thrift store $1 purchase. It was a $4 Amazon dopamine add-on when ordering some embroidery thread I needed to test before bulk buying.
