I like a dish whose presentation leaves you mildly bewildered about how to attack it. In this case, it was ‘Le cappuccino de champignons.’ Mushroom consommé poured over mushroom foam, Comté-filled beignet, parsley purée. Utterly delicious, once I figured it out.
