I have my vertical mega factory, it’s cramped… so currently plotting a central mega factory with mini supply factories specialized and a major rail yard to bring supplies in, that will then ship to the original factory to “finish” things as I don’t want to move the elevator.

Don’t have a latex allergy you can use a fig twig (or chopped green figs) or stinging neetle tea (easy to forage and grow!) and you can make Queso Fresco, farmers cheese (with herbs or without) and if your patient, mozzarella. Which is infinitely better than store bought.

At least 5%, but ALWAYS read the bottle, and yes you should be adding acid to your canned tomatoes. Today’s variety’s are not as acidic as they use to be, modern tastes are sweeter and so the PH has been raised with modern varieties.

Food preservation (FP) (including fermentation (lacto fermentation)) is easy to get started and will help not only increase your nutrient intake and help your gut, it can help you feel more food secure. Yes freezing is a form of FP, and you don’t need fancy gadgets for dehydrating/drying or canning

Fermented foods are good for you, regardless of culture or region. Avoid iodized salt for them (but use it in/pn food, lack of iodine will lower your IQ and cause health issues) use fine sea salt for your 3-5% brine ferment. Wash your hands and use them when making your batch. It’s fun and engaging.

To add, please use iodized salt for almost everything else. Fancy salts don’t contain iodine and the fad of moving away from it will hurt your IQ and provide other health issues.

And because it’s more isolated and on the coast, it’s a lot of older established families. You kinda get the old timey feel for a lot of it. There are certainly progressive pockets but the coast outside of the big cities isn’t going to have night life or anything like that really

Seconded. It is a conservative part of California, but even those are more liberal than other states. SLO and the cost area that area is very coastal mountain, and also very isolated from the rest of CA because of it. Think 2 lane highways with constant traffic.
