Two years ago today I lost my mother. Time goes by too quick. It seems like it was only yesterday. I was lucky to have such a wonderful, kind, and loving mother. Everyone should be so lucky and blessed.

Had some leftover rice I didn’t want going bad so I made fried rice. Used pepper SPAM, peas, and 6 eggs scrambled up. Easy, delicious, and I have leftovers.

Simple dinner tonight. Less than 10 minutes to get it made. Chicken and gravy over mashed potatoes. Used two cans of chicken and two packets of chicken gravy. Kicked up the gravy by adding some salt, pepper, and garlic powder.

Diced pork chops seasoned with S&P, garlic powder, and onion powder, carrots, and baby potatoes in golden mushroom soup. Used a cornstarch slurry to thicken the soup into a gravy.

In 2024, Missouri voters voted to protect abortion rights and Transgender protections. Now, the state legislature is proposing Amendment 3 for the upcoming election. It would go against the will of voters on abortion and transgender rights we already voted to protect. Republicans are assholes.

Woke up today to the news Dolly Parton died. Made me very sad. I grew up hearing her music playing in our house as my mom sewed and cooked. I remember dancing in the kitchen with my mom while she listened to Dolly. Thank you for making the world a better place, Dolly. We will always love you.
