Dinner Rolls from Rebecca @the.practical.kitchen’s Small Batch Breads, alongside vegetarian Zuppa Toscana and plenty of warm cultured butter. Soft, tender and just crusty enough. We ate dinner watching the maple tree in our backyard turn colour. Autumn did its thing. 🍜🍽️@ryeisenberg.bsky.social

You start off in the traditional way with cooking the mushrooms, shallots and garlic. Stir in the rice, add miso to hot stock and pour it all in the pot. Cover tightly and bake in the oven. More butter, Parmesan and herbs added once the rice is out of the oven.

Baked Mushroom Risotto by Nik Sharma @abrowntable from Fundamentals of Flavor. I’ve made plenty of risottos, but never baked one. Shiitake mushrooms (recipe calls for mixed), miso, thyme, Parmesan and lemon zest make this creamy, savoury and bright. And it goes straight from oven to table. 🍽️🍜
