Laura Chau @cosmicpluto.bsky.social · 09/07/2026I’ve been making ice cream (salted caramel, raspberry Oreo, strawberry) and I usually use Jeni’s recipe: 2:1 milk to cream, with cornstarch and cream cheese stabilizers. Just took out Rose Levy Beranbaum’s book and she uses 3:1 cream to milk AND 7-11 egg yolks! Sounds overly rich to me. 000

Sketch and swatch everything. Then start simplifying until something workable is left. Hopefully before it gets down to the deadline! 120
