Fun fact: sodium nitrate (pink curing salt) inhibits bacteria formation in sausages & hot dogs as they spend prolonged periods of time in the “danger zone” Temps at which bacteria grows. “Uncured” & “all natural” sausages/hot dogs use celery salt. Guess what’s naturally found in celery? NITRATES!
