Fresh Pea & Triple Cream Brie Tea Sandwiches
Ingredients
Pea Purée
2 cups (280 g) fresh green peas, blanched and cooled
1 tbsp (15 mL) olive oil
1 tsp (5 mL) fresh mint leaves, finely chopped
½ tsp (2 g) cane sugar
¼ tsp (1 g) garlic powder
¼ tsp (1 g) ginger powder
¼ tsp (1 g) onion powder
½ tsp (3 g) sea salt
¼ tsp (1 g) white pepper
Cheese Layer
4 oz (115 g) triple cream brie, rind removed
2 oz (55 g) triple cream cheese or soft brie blend
Pinch of sea salt to enhance flavor
Bread & Garnish
12 small brioche rolls or tea sandwich buns
Whole peas for texture and visual contrast
Edible flowers or micro greens for garnish
Method
Prepare the Pea Purée
Blanch peas in salted water for 2 minutes, then shock in ice water to preserve color.
Drain and transfer to a ricer or food mill for a fine, airy texture.
Stir in olive oil, mint, cane sugar, garlic, ginger, onion powders, salt, and white pepper.
Adjust seasoning to taste, the purée should be bright, savory, and slightly sweet.
Prepare the Cheese Layer
Blend brie and triple cream cheese until smooth.
Add a pinch of sea salt to draw out the natural flavor of the cheese.
Chill briefly to firm before spreading.
Assemble the Sandwiches
Slice brioche rolls lengthwise without cutting through completely.
Spread a thin layer of salted brie mixture inside each roll.
Pipe the pea purée along the center so it shows visibly when served.
Press a few whole peas into the purée for texture.
Garnish each sandwich with an edible flower or micro green for color and fragrance.
Production Notes
The ricer creates a light, velvety pea texture that contrasts with the rich brie.
Cane sugar balances the mint and white pepper for a clean finish.
Brioche’s buttery crumb pairs naturally with triple cream cheese and fresh peas.
Serve slightly chilled for tea service or as a spring luncheon item.

The visual presentation should show green purée and flowers clearly,  a garden palette on bread.

Tips & Tricks
Texture control: Use a ricer for lightness or a processor for density.
Flavor balance: Keep mint subtle so it doesn’t overpower the brie.
Presentation: Pipe purée neatly and add whole peas for contrast.
Serving temperature: Serve cool but not cold to preserve aroma.
Garnish choice: Use pansies or nasturtiums for color and peppery notes.
Substitutions
Cheese: Replace brie with Camembert for earthier flavor.
Sweetener: Use beet sugar for a drier, cleaner sweetness.
Herbs: Swap mint for tarragon or chervil for a French accent.
Bread: Use milk bread or soft rolls if brioche is unavailable.

Dockside Sticky Buns
Ingredients
Dough
1 cup (240 mL) whole milk, lukewarm (about 100 °F / 38 °C)
2 ¼ tsp (7 g) instant yeast
¼ cup (50 g) granulated beet sugar
2 large eggs, room temperature
4 cups (480 g) bread flour plus extra for dusting
1 tbsp (15 g) potato flour, blended in with the bread flour
1 tsp (6 g) salt
½ cup (115 g) unsalted butter, softened
Filling
½ cup (110 g) soft unsalted butter
¾ cup (150 g) dark brown sugar
1 tbsp (8 g) ground cinnamon
½ tsp (2 g) ground nutmeg
¼ tsp (1 g) ground clove
1 tsp (5 mL) vanilla extract
Sticky Topping
¾ cup (170 g) unsalted butter
1 cup (220 g) dark brown sugar
⅓ cup (80 mL) heavy cream
¼ cup (85 g) local honey or molasses
1 tsp (5 mL) sea salt solution (½ tsp salt dissolved in 1 tsp hot water)
1 ½ cups (180 g) toasted pecans or walnuts, rough‑chopped
Method
Prepare the Dough
In a large bowl, combine milk, yeast, and sugar. Let stand 5 minutes until foamy.
Whisk in eggs and salt.
Add flour blended with potato flour gradually, mixing until a rough dough forms.
Knead in soft butter until the dough is stretchy and silky, about 10 minutes by hand or  6 minutes in a mixer.
Place in a greased bowl, cover, and let rise until doubled (about 1 hour in a warm kitchen).
Make the Sticky Topping
Melt butter in a saucepan over medium heat. Add brown sugar, cream, honey, and salt  solution.
Simmer 3–4 minutes until thick and glossy.
Pour into a buttered 9×13 inch (23×33 cm) pan and scatter nuts evenly over the surface.
Fill and Shape
Roll out risen dough on a floured surface to a rectangle about 12×18 in (30×45 cm).
Spread soft butter over the surface, then sprinkle brown sugar, spices, and vanilla.
Roll tightly from the long edge into a log. Slice into 12 thick rounds.
Arrange rounds cut‑side up on the sticky topping. Cover and let rise 45 minutes.
Bake
Preheat oven to 350 °F (177 °C).
Bake 25–30 minutes until deep golden brown and the centers spring back lightly.
Rest 5 minutes, then invert onto a tray so the sticky topping flows over the buns.
Production Notes
The stretchy, buttery dough is the signature of the Northeastern dockside style, soft,  never dry.
The locals swear the dough is “just done,” not underbaked, moist from the caramel steam.
The spice blend leans toward nutmeg and clove for a cold‑morning warmth.
The 4:30 a.m. ritual at the docks was to pull the first tray from the oven as the boats came in.
Outsiders often mistake the texture for undercooked bread, locals call that “perfect stretch.”

🍩 A true Northeastern dockside sticky bun; buttery, stretchy dough steamed in caramel and nuts, born from 4:30 a.m. bakery rituals. Outsiders call it underdone; locals call it perfect folklore. #TheOutpost #Cooking #Cooksky #Foodsky #Baking #Bakesky #Recipe Click here for recipe 🍽️🍜👨‍🍳🐝🦋
A close‑up of a Northeastern‑style sticky bun on a white plate. The bun is golden brown and glossy, topped with a thick layer of caramelized pecans and walnuts that glisten under the light. The dough appears soft and rich, with visible spirals and a buttery sheen, evoking the dense, stretchy texture of a fresh dockside pastry.

Let rest 10 minutes to activate leavening and hydrate corn flour.
Cook the Griddle Cakes
Heat a large griddle or skillet to medium‑high (about 350 °F / 175 °C).
Lightly grease with butter or oil.

Optional: dust with powdered sugar or add a pat of butter for shine.
Production Notes
Melted ice cream acts as custard base and controls overrun for dense but airy texture.
Baking powder and soda combine for lift and rich crumb.
White corn flour adds sweet aroma and slight grit for griddle character.
Butter and oil emulsified into egg prevent greasy edges and create even browning.
Resting batter is essential for optimal rise and flavor integration.

🌭 Golden‑fried andouille chunks in a seasoned cornmeal crust, served with sweet Creole remoulade. The creamy sauce offsets the sausage’s heat with capers, relish, and brown‑sugar brightness. #TheOutpost #Cooking #Cooksky #Foodsky #Recipe Click here for recipe 🍽️🍜👨‍🍳🐝🦋

6 oz (170 g) small pasta shells

1 tsp (5 mL) olive oil to prevent sticking
Garnish
Fresh parsley sprigs
Shredded Parmesan cheese

Heat olive oil in a heavy saucepot over medium heat.
Add onion and cook until translucent and soft, about 5 minutes.
Add garlic and tomato paste; stir until fragrant and slightly caramelized.
Pour in crushed tomatoes and stock.
Season with salt, pepper, sugar, vinegar, basil, oregano, and thyme.
Simmer uncovered for 20 minutes to meld flavors.
Add chopped spinach and cook until just wilted, about 2 minutes.
Taste and adjust balance between sweetness and acidity.
Cook the Pasta Shells
In a separate pot, boil salted water.
Add pasta shells and cook until just al dente.
Drain, toss lightly with olive oil, and hold warm.
Immediately before serving, add the hot shells to the simmering soup so they retain texture.
Serve
Ladle the soup into warm bowls.
Top with shredded Parmesan and a sprig of parsley.
Serve with crusty bread for contrast.

Maintain a gentle simmer to preserve herb aroma without boiling off brightness.
Sugar and vinegar work in tandem to balance tomato acidity.
Spinach should appear  green, not overcooked.
Add shells only at service to keep them firm and distinct.

Thanks. These recipes were developed over my five‑decade career for my restaurants and for my clients. I have been fortunate to work across many concepts, cuisines, and cultures, each one adding something new to every menu. As for sugar cookies, nothing beats a classic for a sweet tooth.

Try it with king oyster mushrooms, or young green jackfruit that has been canned. While I have not had that on a menu for this sandwich, I have worked with both of those products very frequently to create a vegetarian alternative to chicken. Thank you so much for your comment.

Classic macarons are pretty straightforward. This banana version is more involved because of the moisture content. The real trick is giving the shells enough time to dry properly, that’s where the whole thing succeeds or fails.

Add chicken and let sizzle undisturbed for 30 seconds.
Season with salt, pepper, paprika, cayenne, brown sugar, and vinegar.

Build the Hoagie
Toast the roll lightly.
Spread mayonnaise on both heel and crown.
Layer pickle slices on the heel.
Arrange tomato slices and shredded lettuce on the crown.
Deposit the hot chicken and cheese onto the heel.
Close the sandwich and serve immediately.
Production Notes
Chicken should retain texture, avoid over‑chopping.
Balance sweetness and heat for a Southern‑style profile.
Steam‑melt creates a silky cheese finish without grease.
Toasted roll prevents sogginess and adds crunch.
