Today I am thankful for the availability of spices and produce. It really lets me explore different flavor combinations. Tonight’s meal was an original creation and included apples, prunes, sage, thyme, cloves, and nutmeg. And yes, I am a salty/sweet truther

Have arthritis, coordination, or other problems? Use a battery operated pepper mill. My mom has one and she loves it. Fresh herbs and spices take your food to a whole other level.

Cat’s Do’s: If you are able to grind black pepper, do so. Don’t have a pepper grinder? Get one. This will ensure your pepper is fresh and full of flavor.

Notes: lime zest has a very strong flavor; you may need to add more zest if you’re using lemon. Freezing your zest is an excellent way to preserve its flavor for later use. When buying fresh citrus, zest it before you squeeze it. (Btw, fresh IS WORTH it) FRESH dill is important! It doesn’t dry well

Combine the first 3 ingredients(4, if youre using dried tarragon, to draw out the flavor) and let simmer for at least 6 minutes. Add the lime or lemon zest and dill, mix thoroughly, and add to your pasta. And you’re done!

Since this was never really measured in any way by my mom, I am doing my best to recreate it. Please note that this recipe should, for all intents and purposes, be considered incomplete…but you’re welcome to take a crack at it!

Aaaand into the kitchen to crack the secrets of a simple but wildly flavorful childhood favorite! This pasta is quick and easy, and is a fresh take on noodle dishes for those who like salmon.
A pot of salmon-pea pasta. See thread for ingredients.

Do you prefer cinnamon or lemon flavored sweets? One of my favorites is lemon hard candies! I know it’s not advised to crunch them, but I love doing it. It gives a similar texture to crunching ice and I find the tang-sweetness so satisfying.

Mint chocolate: yes or no? And if yes, milk or dark chocolate?

Instead of using my colander or slotted spoon (both in the dishwasher) I scooped my sweet potatoes against the side of the pot, lifted it from the water, and transferred them to a bowl. This got rid of the water almost as effectively, if more time-consumingly, as a colander.

Tonight’s lesson! (Those familiar with the Hitchhikers Guide To The Galaxy might know this one…) DONT PANIC. Managing cooking things correctly can be difficult….especially when you find out that several of your important cooking tools are in the dishwasher.

I’d like to share what I’ve learned, and I hope that this journey will be both educational and entertaining as I walk through the ins and outs of my pantry, the dos and dont’s of cooking, the tools good and bad, and the pleasure of a good meal. Stay tuned, and stay hungry! #autism #cooking

Hello! Welcome to my page! I am an autistic queer cook (I think “chef” is probably too high brow for the meals I make) and I’d like to help YOU spice up your dinner routine. What makes me qualified? …well, not much. But I have been eating from a very skilled cooks table for a VERY long time.
