three 3/4 full pint mason jars of sliced red onion in a brine of 2 parts water and 3 parts (white & apple cider) vinegars, crushed red pepper flakes, honey, and kosher salt. I freaking LOVE these, on sandwiches, with cheese & crackers, in a quesadilla, quick hummus wrap with cucumber & carrot, on pizza-- they are an excellent condiment

Veggie dog psa: the vegan kroger brand #simpletruth is actually pretty good. Decent firmish texture & present but not overwhelming taste. I kept them frozen & warmed up on a baking sheet with some roasted potatoes (high heat will cause them to balloon a bit but no exterior tearing or sticking)
