...reseating the drive and a brief resilver seems to have solved the issue? For now? No more I/O errors in dmesg, and honestly, I'm no expert, but the amount of errors the drive was experiencing would've seemed completely catastrophic to appear out of nowhere. So... good to go?

But now thankfully everything is in the pool by its ID rather than its /dev/sdx name so plugging the rest of the drives in shouldn't put me through this hell again. I'm legit quite frustrated, but live and learn I guess. And at least this resilver will happen overnight.

One lesson I have learned already: take great care when moving data around and adding/removing drives, because resilvering misery. Love that it happens automatically, hate that my whole migration process grinds to a halt because of it.

It also took me longer than I care to admit to understand that ZFS handles mounting the drives itself and that I don't need to add anything to fstab. I guess I've listened to enough @25admins to get indoctrinated into the church of ZFS but not enough to actually know what I'm doing 😅

Thankfully I've got another machine that I'm using as a backup host to make sure I don't lose any data, but figuring out which physical drives are which and shuffling all of this data around is such a bore.
