Something is broken with the Baseball playoffs when the three best teams in the American League are placed in the same bracket and the 3 worst teams are placed in a bracket. They need a new seeding system. Division Winners is obsolete. Tampa is being punished for having the best record. Ranger fan.

Dinner last night… Crispy skin Duck Breast with Yellow Squash Hash. Crisped some sage, rosemary and shallots in the duck fat to accompany each bite. Wok-fired Squash with yellow onion, yellow bell pepper, basil and tarragon. Go low and slow on the temp to render out the duck fat. More in ALT…

Dinner on a square white plate. Duck breast with browned crispy skin with a side of yellow squash, yellow bell pepper and onions. Crispy shallots, rosemary and sage on the side.

My method for crispy skin Duck:
1. Cut slits in the fat side of the raw duck breast; don’t slice too deep into the meat.
2. Salt and pepper both sides.
3. Using a Dutch oven uncovered, cook skin side down on low temp for 30 minutes or so. I like a Dutch oven because of its depth for the amount of fat that is rendered. On meat side (facing up), add rosemary and sage sprigs.
4. Spoon some duck fat over the meat side at about the 20 minute mark and 30 minute mark.
5. Check the skin side for crispness and slightly darkening. When rendering of fat is complete, flip to meat side down for a few minutes, as it won’t take long to get a medium rare to medium sear. Plus it will continue to cook internally during the quick broil stage and on its own. If you want medium rare, only put meat side down for less than two minutes, maybe only a minute. That liquid fat is hot.
6. Remove breasts to a sheet pan, skin side up. Salt the skin side. Place under a broiler in the oven. Watch carefully as it further crisps and browns for a few minutes. Don’t burn.
7. With the duck fat in the Dutch oven, add sliced shallots and rosemary and sage to crisp up.
8. If you like cooking with duck fat: after cooling, pour through a fine mesh sieve in to a glass jar. Store in the fridge.
