🦐 New Orleans Style Shrimp & Grits

Ingredients
1 lb shrimp, peeled & deveined
1 Tbsp ghee
1 Tbsp olive oil
½ cup onion, finely chopped
½ cup bell pepper, finely chopped
½ cup celery, finely chopped
2 cloves garlic, minced
1 tsp fresh ginger, minced
1 tsp dill
1 tsp thyme
1 tsp Creole seasoning (or to taste)
Dash cayenne (optional, for heat)
1 cup coconut milk (or milk of choice)
¾ cup grits
Salt & pepper
Few dashes hot sauce (Crystal or Tabasco)
2 green onions, sliced
Fresh parsley, chopped
Lemon wedge (optional)

Instructions
Heat ghee + olive oil in skillet.
Sauté onion, bell pepper, celery until soft.
Add garlic, ginger, dill, thyme → cook fragrant.
Stir in shrimp + Creole seasoning → cook until golden.
Pour in coconut milk + stir in grits.
Season with salt, pepper, cayenne, and hot sauce.
Simmer, stirring, until grits creamy + shrimp cooked.
Serve hot, topped with green onions, parsley, and lemon squeeze.

🐟 Baked Salmon with Garlic & Dill
Ingredients

1 lb fresh salmon fillet
1 Tbsp olive oil
1 Tbsp ghee (melted)
3 cloves garlic, minced
2 Tbsp fresh dill (or 2 tsp dried)
Salt & black pepper

Instructions

Preheat oven to 375°F.
Line a baking dish with parchment or lightly oil.
Pat salmon dry and place skin-side down.
Mix olive oil, ghee, garlic, dill, salt, and pepper.
Brush mixture over salmon.
(Optional) Add lemon slices on top.
Bake 25–30 minutes until salmon flakes with a fork.
Rest 5 minutes before serving.

Focaccia Bread Homemade

Ingredients

• 1 ⅓ cups all-purpose flour
• ¾ tsp kosher salt
• ¾ tsp sugar or honey
• ¾ tsp active dry yeast
• ⅔ cup warm water (used to activate yeast)
• 2–3 Tbsp olive oil (some in pan, some on top)
• Flaky salt + toppings (rosemary, garlic, tomatoes, etc.)

Method (One-Pan Overnight)

1. Activate yeast → Mix warm water (⅔ cup), sugar/honey, and yeast directly in your 7×5 pan. Let it foam 5–10 min.
2. Add dry ingredients → Stir in flour + salt until sticky dough forms. Scrape sides down, spread lightly so dough is coated in oil/water mix.
3. Overnight rise → Cover pan tightly and let sit at room temp 8–24 hrs. Dough will get puffy and bubbly.
4. Second rise → Next day, drizzle 1 Tbsp olive oil on top. Gently spread dough to edges of pan. Cover and let rise 2–3 hrs.
5. Dimple + top → Preheat oven to 450°F (230°C). With oiled fingers, poke deep dimples. Add more olive oil, flaky salt, and toppings.
6. Bake → 18–22 min, until golden brown and crisp at edges.
7. Cool slightly → Slice and serve warm.

A clear glass plate with three foods: a piece of focaccia bread sprinkled with dill, a serving of creamy shrimp and grits, and a portion of baked salmon topped with sliced parsnips and herbs.
