This month we're focusing on a particular technique, spatchcocking! Also known as butterflying, spatchcocking is a poultry cooking technique where you remove the spine and press it flat which makes it cook faster, more evenly, and increases surface area for seasoning.

The path I’m on has to be walked alone. Everything I want I need to get or create with my own hands. I can’t keep the pace I want depending on others. But that’s ok. I asked for help today instead of doing something myself. I could have done it, I simply didn’t want to and decided not to push myself. The thing is not done. And everything that comes after it will now no longer be able to be done today. And things are delayed. This is a lesson for me.
