Classic Pumpkin Pie
A smooth, creamy pumpkin custard with warm spices in a flaky crust. It's a staple on American Thanksgiving tables.

INGREDIENTS
• 1 unbaked 9-inch deep-dish pie crust
• 1 can (15 oz) pure pumpkin puree
• 1 can (12 oz) evaporated milk
• 2 large eggs
• 0.8 cups granulated sugar
• 1 teaspoons ground cinnamon
• 0.5 teaspoons ground ginger
• 0.3 teaspoons ground cloves
• 0.3 teaspoons ground nutmeg
• 0.5 teaspoons salt
• 1 teaspoons vanilla extract

STEPS
1. Preheat: Heat the oven to 425°F (220°C). Place 1 unbaked 9-inch deep-dish pie crust in its pan on a rimmed baking sheet, which makes it easier to move and helps the bottom bake evenly.
2. Mix the spices: Stir together 0.8 cups granulated sugar, 1 teaspoons ground cinnamon, 0.5 teaspoons ground ginger, 0.3 teaspoons ground cloves, 0.3 teaspoons ground nutmeg, and 0.5 teaspoons salt in a small bowl.
3. Make the filling: In a large bowl, beat 2 large eggs lightly. Stir in 1 can (15 oz) pure pumpkin puree and the spice mixture, then gradually whisk in 1 can (12 oz) evaporated milk and 1 teaspoons vanilla extract until smooth.
4. Bake hot: Pour the filling into the crust. Bake at 425°F to set the crust and start the custard.
5. Bake low: Reduce the oven to 350°F (175°C) without opening the door longer than needed. Bake until a knife inserted near the center comes out clean. If the crust edges brown too fast, cover them with foil.
6. Cool completely: Cool the pie on a wire rack so the custard fully sets. Serve at room temperature or chilled with whipped cream.

NOTES
The center should still jiggle slightly when you pull it out; it firms up as it cools. Overbaking causes cracks. The pie keeps covered in the fridge for up to 4 days, and it's even better made a day ahead. Top with whipped cream, a pinch of cinnamon, or candied pecans.

Silky, golden soup made with oven-roasted butternut squash, a tart apple, and a touch of nutmeg and cream.

INGREDIENTS
• 3 pounds butternut squash, peeled, seeded, and cut into 1-inch cubes
• 2 tablespoons olive oil
• 2 tablespoons unsalted butter
• 1 yellow onion, diced
• 1 Granny Smith apple, peeled and diced
• 3 garlic cloves, minced
• 4 cups vegetable or chicken broth
• 0.5 cups heavy cream
• 0.3 teaspoons ground nutmeg
• 1 teaspoons salt
• 0.5 teaspoons black pepper

STEPS
1. Roast the squash: Heat the oven to 425°F (220°C). Toss 3 pounds butternut squash, peeled, seeded, and cut into 1-inch cubes with 2 tablespoons olive oil and half of the 1 teaspoons salt on a rimmed baking sheet. Roast, stirring once, until tender and caramelized at the edges.
2. Sauté the aromatics: While the squash roasts, melt 2 tablespoons unsalted butter in a large pot over medium heat. Cook 1 yellow onion, diced and 1 Granny Smith apple, peeled and diced until soft and lightly golden. Stir in 3 garlic cloves, minced for the last minute.
3. Simmer: Add the roasted squash, 4 cups vegetable or chicken broth, 0.3 teaspoons ground nutmeg, 0.5 teaspoons black pepper, and the remaining salt. Bring to a boil, then reduce to a simmer so the flavors meld.
4. Blend: Blend the soup until completely smooth with an immersion blender, or in batches in a regular blender (vent the lid and cover with a towel to let steam escape).
5. Finish with cream: Stir in 0.5 cups heavy cream and warm gently without boiling. Taste and adjust the seasoning, adding a splash of broth if it's too thick.
6. Serve: Ladle into bowls and top with toasted pepitas, a swirl of cream, crispy sage leaves, or crusty bread on the side.

NOTES
For a dairy-free version, swap the butter for more olive oil and the cream for full-fat coconut milk. A pinch of cayenne or a teaspoon of curry powder adds a nice kick. The soup freezes well for up to 3 months.

INGREDIENTS
• 8 bone-in, skin-on chicken thighs
• 1.5 pounds butternut squash, peeled and cut into 1-inch cubes
• 1 pounds Brussels sprouts, trimmed and halved
• 1 red onion, cut into wedges
• 3 tablespoons olive oil
• 3 tablespoons pure maple syrup
• 2 tablespoons Dijon mustard
• 1 tablespoons apple cider vinegar
• 3 garlic cloves, minced
• 1 teaspoons dried thyme
• 1.5 teaspoons salt
• 0.5 teaspoons black pepper

STEPS
1. Preheat: Heat the oven to 425°F (220°C) with a rack in the middle. Line a large rimmed baking sheet with parchment or foil.
2. Make the glaze: Whisk together 3 tablespoons pure maple syrup, 2 tablespoons Dijon mustard, 1 tablespoons apple cider vinegar, 3 garlic cloves, minced, and 1 teaspoons dried thyme in a small bowl. Set aside.
3. Prep the vegetables: Toss 1.5 pounds butternut squash, peeled and cut into 1-inch cubes, 1 pounds Brussels sprouts, trimmed and halved, and 1 red onion, cut into wedges with 3 tablespoons olive oil, half of the 1.5 teaspoons salt, and half of the 0.5 teaspoons black pepper. Spread them across the pan, leaving space for the chicken.
4. Add the chicken: Pat the chicken dry, season with the remaining salt and pepper, and nestle 8 bone-in, skin-on chicken thighs skin-side up among the vegetables. Brush with about half the glaze.
5. Roast: Roast until the skin is crisp and the chicken reaches 175°F (80°C) in the thickest part. Brush with the remaining glaze for the last 10 minutes so the maple doesn't burn.
6. Rest and serve: Rest the chicken on the pan for 5 minutes, then spoon the pan juices over everything and serve.

NOTES
Toss in sliced apples or a handful of pecans for the last 15 minutes for extra fall flavor. Boneless thighs also work, but reduce the roasting time to about 25 minutes. Leftovers keep in the fridge for 3 days.

INGREDIENTS
• 2 tablespoons olive oil
• 1 large yellow onion, diced
• 1 red bell pepper, diced
• 4 garlic cloves, minced
• 1 pounds ground turkey
• 2 tablespoons chili powder
• 1 teaspoons ground cumin
• 1 teaspoons smoked paprika
• 0.5 teaspoons ground cinnamon
• 1 teaspoons salt
• 0.5 teaspoons black pepper
• 1 can (14.5 oz) diced tomatoes
• 1 can (15 oz) pure pumpkin puree
• 1 can (15 oz) kidney beans, drained and rinsed
• 2 cups chicken broth

STEPS
1. Sauté the vegetables: Heat 2 tablespoons olive oil in a large Dutch oven or pot over medium heat. Add 1 large yellow onion, diced and 1 red bell pepper, diced and cook until softened. Stir in 4 garlic cloves, minced for the last minute.
2. Brown the turkey: Add 1 pounds ground turkey to the pot, breaking it up with a spoon, and cook until no pink remains.
3. Toast the spices: Stir in 2 tablespoons chili powder, 1 teaspoons ground cumin, 1 teaspoons smoked paprika, 0.5 teaspoons ground cinnamon, 1 teaspoons salt, and 0.5 teaspoons black pepper. Toast the spices for about 1 minute until fragrant.
4. Add the rest: Add 1 can (14.5 oz) diced tomatoes, 1 can (15 oz) pure pumpkin puree, 1 can (15 oz) kidney beans, drained and rinsed, and 2 cups chicken broth. Stir well and bring to a boil.
5. Simmer: Reduce the heat to low, partially cover, and simmer, stirring occasionally, until thick and flavorful. Add a splash of broth if it gets too thick.
6. Season and serve: Taste and adjust the salt and spice. Serve hot with shredded cheddar, sour cream, sliced scallions, or crushed tortilla chips.

NOTES
For more heat, add a diced jalape\u00f1o or a pinch of cayenne. Swap the turkey for ground beef or add a second can of beans to make it vegetarian. It tastes even better the next day and freezes well for up to 3 months.
