I made some ersatz enchiladas by layering little corn tortillas, red enchilada sauce, finely chopped cooked stew meat, cheese blend and roasted Hatch chile. Not thrilled with the enchilada sauce I used but apart from that it's enchiladasagna and I fw it #cooking #chefsky #Minterland 🍽️
