No idea why we're modern-ricing this one, but... 20 years ago, normal people avoided technology and techies would jump on the newest gadgets as soon as they could. Now, normal people buy smart toasters & coffee mugs while every techie I know is on the verge of retreating to the forest

I way overpaid. And I completely recognize that FIFA is not just a corrupt organization but a corrupting influence. But if you can, go to a World Cup match at least once in your life. I went to GER-PAR yesterday and it was completely worth it, despite the disappointing result.

After several years of near weekly experiments, I've pretty much settled on a plant-based #pizza #cheese #recipe without cashews. Is it like cheese? Meh. But it tastes pretty good and does serve the function of cheese on a pizza to add richness and hold toppings on. [recipe text in alt]

Start with
- 2oz (56g) raw almonds
Blanch almonds for 90 seconds in boiling water until the skins lift from the almond meats.
Chill in water quickly, deskin, rinse, and add filtered water until the total of water and almonds is 1 1/4c (285ml).
Blend on (vitamix) high for 30 seconds. strain, rinse out blender bowl, and return strained almond milk to blender. Then add:
* 1/2tsp salt. Optionally use salt substitute in place of half of salt; that's what I do. Optionally add up to 1/4tsp more salt if you like it saltier.
* 1/2Tbsp nutritional yeast
* 1/4tsp lactic acid powder
Blend on low-medium in vitamix until incorporated, less than 1 minute. Add:
* 1/2tsp agar
* 1/2tsp tapioca starch
* 1tsp potato starch
* 1/2tsp konjac
Blend on low medium until incorporated. Add:
* 6Tbsp (3oz or 85g) melted coconut oil -- for a cheesier flavor, substitute melted ghee for half of the coconut oil
Blend on medium until emulsified. Pour out into measuring cup. This is ready to be poured on unbaked pizza (I put it over the other toppings), used in quesadillas, cooked in a saucepan to make a solid cold cheese, etc. You can also eat it raw but the texture is weird and foamy when cold.

Nut substitutions for some or all of the almonds:
- roasted hazelnuts - gives a nutty, savory flavor, perhaps closer to an actual cheese flavor
- raw walnuts - great flavor, the walnut bitterness is a nice addition, odd pink color

I've named this airplant Little Dude. He's the fourth offspring from his mother and definitely the least expected one. Mom Plant is pretty curled up and dried up at this point, and it seemed to lead to this one departing very early and undersized from Mom […] [Original post on mastodon.social]
