I think I now have a sourdough familiar, @tkingfisher.com — I found a packet of dried starter I bought 30 years ago in the Yukon, and it revived. I am genuinely shocked.

We seem to have a hot dog/bun problem with bagels and lox. So I keep making bagels and buying lox. This is an expensive problem.
