Played through BG3 over six times and I STILL have no idea what is the best option for the vampire spawn. Keeping Astarion from completing the ritual is the best choice for HIM yes. However, what to do with the 7000?

It's truly a matter of personal choice. If you're not sure, try all the different options and see what happens... Personally, I have always released them because they are victims, just like Astarion & his siblings. It's not their fault they were turned against their will. They deserve a chance.
